Microgreens Salad with Lemon Vinaigrette
ingredients
- 2 cups Confetti Mix microgreens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup thinly sliced red onion
- 1/4 cup crumbled feta cheese
- 1/4 cup toasted sunflower seeds
lemon vinaigrette
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
instructions
1. In a large bowl, combine the microgreens, cherry tomatoes, red onion, feta cheese, and sunflower seeds.
2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until well combined.
3. Drizzle the vinaigrette over the salad and toss gently to coat.
4. Serve immediately and enjoy!
Grilled Chicken and Microgreens Wrap
ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 large whole-grain tortillas
- 1 cup mixed microgreens
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumbers
- 1/4 cup crumbled feta cheese
- 1/4 cup hummus
- 2 tablespoons Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon chopped fresh dill

1. Preheat the grill to medium-high heat. Season the chicken breasts with olive oil, paprika, garlic powder, salt, and pepper.
2. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from the grill and let rest for a few minutes before slicing into thin strips.

Green Power Microgreens Smoothie
ingredients
- 1 cup mixed microgreens
- 1 ripe banana
- 1/2 cup frozen pineapple chunks
- 1/2 cup frozen mango chunks
- 1/2 cup Greek yogurt
- 1 cup unsweetened almond milk
- 1 tablespoon chia seeds
- 1 tablespoon honey
- Ice
instructions
1. In a blender, add the microgreens, banana, frozen pineapple, frozen mango, Greek yogurt, and almond milk.
2. Blend on high until smooth and creamy. If the smoothie is too thick, add more almond milk until you reach the desired consistency.
3. Add the chia seeds and honey and blend for another 10-15 seconds until well incorporated.
4. If you prefer a thicker smoothie, add a few ice cubes and blend until smooth.
5. Pour the smoothie into a glass and enjoy immediately.
